Mercury is used in many thermometers.
Since Liquids have a definite volume but indefinite shape, it is convenient to use a liquid to make a thermometer since the liquid will expand/contract based on heating and you can measure the temperature with just a ruler. Mercury is a liquid for a large temperature range around room temperature, so it is convenient.
